Palm Kernel Oil, derived from the seed of the oil palm fruit (Elaeis guineensis), is extracted by pressing and refining the kernel. It is highly saturated, rich in lauric acid and medium‑chain triglycerides, giving it firmness and stability. Covering ~3–4% of the edible oils market, it is widely used in confectionery, baked goods, margarine, and industrial products like soaps, detergents, and surfactants. Palm kernel oil was first commercialized in West Africa and Southeast Asia in the 19th century. Interesting fact: palm kernel oil’s sharp melting profile makes it a cost‑effective substitute for cocoa butter in chocolate production.
