Hydrogenated Palm Stearin

Hydrogenated palm stearin is the stearin fraction of palm oil hydrogenated to completion over a catalyst, giving a hard, sharp-melting triglyceride wax of vegetable origin. It is supplied as flakes or beads with a melting point of 57C, acid value 1.0 maximum, saponification value 195-205 mg KOH/g, moisture 0.2% maximum and colour 2.5R Y20 on the Lovibond 5.25 inch scale, in 25 kg bags or jumbo bags, at 55-62% C16 and 33-45% C18. Ordinary palm stearin still carries substantial unsaturation, at an iodine value in the region of 35 to 45. Each of those double bonds does two things: it kinks the chain so neighbouring chains cannot pack tightly, which is why the unhydrogenated material is softer and melts over a broad range, and it creates the adjacent position from which a hydrogen is easily lost, which is where autoxidation begins and where the breakdown products smelled as rancidity come from. Hydrogenating it to 0.5 maximum removes essentially all of the remaining double bonds, and the result behaves quite differently: harder, sharper melting, and very resistant to oxidation and rancidity because there is almost nothing left to oxidise. That stability is the point. A wax blend that must sit on a shelf, or in a warm warehouse, for a long period without developing off-odours benefits from a fully saturated hardstock in a way that an unhydrogenated one does not. In a blend it is the component that crystallises first and forms the network the softer waxes sit in, so it sets firmness and governs how readily the blend gives up its melt.
