When palm kernel oil is cooled under precise conditions, it separates into a solid fraction (palm kernel stearin) and a liquid fraction (palm kernel olein). The resulting olein is a clear, light-coloured oil with a low melting point and excellent pourability.

Palm kernel olein is rich in lauric acid (C12) and capric/caprylic medium-chain fatty acids, giving it outstanding clarity, rapid absorption, and a light, non-greasy feel. These characteristics make it highly desirable in the food industry as a cooking oil, frying medium, and ingredient in non-dairy creamers, ice cream, and filled milk formulations.
